It's widely considered that the ins and outs
of juicing machines are not topics for polite conversation.
Nor might
you expect that anyone you know, who you might normally discuss such
topics as the
opposite sex, politics, money, the financial crisis
or one's own crazy business project's crisis, to be a
silent harbinger
of knowledge about the health benefits of juicing, and the implications
of choosing a
slow speed juicer over those loud boorish machines
that occupy juice bars, cafes or the cheaper
shelves of department
stores.
So when I invited my old mate Lewis Hiley over to
come and help me explore the Compact
Juicer, I was
quickly surprised by
the abundance of insight he shared.
A good friend of his had been diagnosed with colonic
cancer - and this friend's first response was
to purchase a juicing
machine. But not just any, Lewis recounted, but a cold-press juicer,
which, he
added, ensures that the "living enzymes" in the fruit and
vegetables are not destroyed by
the juice-making process.
Lewis told of how his friend went on a disciplined
live enzyme juicing regime and within a few
months, the cancer was gone. This preliminary tale required no prompting
on my part.
Lewis continued that since then he'd done a lot
of research into the various juicing machines
on the Australian market,
comparing them for value, price, size, quality and functional attributes.
At the time of his coming over, he still hadn't decided on what to
go for - whether to strike out for a
juicer at around $750, or to
see what his other options might be - so he was pretty curious about

We got stuck into the juicing by starting with a
combination of carrots, oranges, celery, ginger
and apples. Fantastically
easy to set up and to operate, it was very easy to push the juice
in
and the machine was very quiet, we both remarked.

Strangely enough, the fruit processing totally fascinated
my young son, who could not take
his eyes off the machine. Since
the juicing section can be viewed through the clear plastic, it
fascinates
young eyes, and in fact ever since this night of juice extravaganza,
my young son
asks every day if we can do more juicing. He loves it
and loves being involved. And indeed he
loves the juice that comes
out - even when it contains carrot and beetroot!
There are plenty of things worth knowing about the
health benefits of juicing, from the costs involved
in relation to
buying a packaged juice or picking up a freshly squeezed one from
your local juice bar, to
an article by Dr
Sandra Cabot, she of the
Liver Cleansing Diet, who in fact has since released another
book
titled Raw Juices Will Save Your Life.
Speaking of livers, dear Lewis could not have found
himself a more suitable Saturday night activity
considering his Friday
night had involved the consumption of at least 20 cocktails at some
high-end
fashionista party. There was a boat cruise around Sydney
Harbour, a limousine, and a hangover to
rival any he'd ever had -
the man had never been happier to roll up at a wholesome tee-totalling
Saturday evening juicing session.

We live in carcinogenic times, certainly only compounded
by the current economic crisis. So if a little

The Compact Juicer is quicker than any other gear
juicer - without compromising juice quality or nutrient integrity:
The reason for this is a major re-think with the choice of motor.
Other gear-type juicers operate an AC motor, where as the Compact
utilises a DC motor. A DC motor is better able to deliver power variably
and thus is more power efficient and also emits less heat. Critically,
the DC motor of the Compact Juicer doesn't react to resistance by
halting but rather by slowing down. Thus you can juice continuously
compared with other gear juicers that halt regularly - slowing you
down and causing parts damage. In fact the Compact Juicer achieves
95% fewer parts breakages.
How does the Compact Juicer achieve 95% less parts breakages? To
best answer that question we should first answer why parts breakages
occur at all. Except in rare circumstances of manufacturing defect,
parts breakages occur when a machine is over-used - either the machine
is used for too long or too heavily. All juicers of this type carry
a 50% duty cycle motor, which means you can operate for around 20-30
minutes and must then rest the machine for a similar time. Parts
breakages under extended periods of non-intermittent use cannot be
avoided - the stresses are too great as the temperature of all parts
rise. Obviously a higher temperature is not good news for your juice
so quite simply: keep to the recommended operation times with all
juicers. With regard to heavy use - this is common with gear-type
juicers because the feeding process is slow compared with centrifugal
type machines, and quite naturally people want things to happen faster.
What people usually don't perceive is that food entering the machine
must logically exit the machine at the same rate, otherwise the pressure
inside rises until the resistance on motor reaches a tipping point:
The result is that the motor and all parts suddenly halt. This is
why gear-type juicers include a reverse function, so that you can
back up and attempt to clear the blockage. But what happens during
the sudden stop, is that both the motor and parts are jolted causing
an accumulation of minute stress damage. Eventually, and usually
without any prior warning, something breaks. It may be the gear,
the juicing screen, or worse the gearbox - but in any case you are
left without a functioning juicer, and unless your reseller is especially
sympathetic you will have to pay for replacement parts. Are the manufacturers
continually trying to strengthen the parts to avoid breakage? Yes
and no - there's little more that can be done, and spare parts are
profitable business.
But the Compact juicer is different. The Compact was designed from
the ground up with longevity in mind, and the primary feature that
gives such last-ability to its parts is a new technology in the motor
that avoids the 'jolt' described above. Simply, the motor is sensitive
enough to slow down under increased pressure, so that a final halt
doesn't come as a stress-causing jolt. In our extended tests we were
unable to get the Compact Juicer to halt at all and marvelled at
how instead it would slow down and not block. That meant juicing
and food processing was far quicker than with other single-gear extractors.
What sets the Compact Juicer apart from other juicers?
The new Compact uses minimal bench space - as the name suggests.
The low RPM (75-85) of the Compact and the gentle crushing and
squeezing process is similar to a Cold-Press method, therefore
generating minimal friction heat.
What about the Quality of the Juice?

Homemade Italian Sausage
1.25kg lean ground pork butt or leaner cuts if desired (minced)
3 large cloves garlic, crushed
1/8 tsp dry basil 1/8 teaspoon dry oregano
1/8 tsp cracked rosemary
1/8 tsp hot red pepper flakes (or to taste)
1 and 1⁄4 tsp fennel seed (up to 1 tbsp if you like dominant
fennel
flavor)
1⁄4 cup beef or chicken broth or dry white wine
1⁄2 tsp salt
1 1⁄2 tsp freshly ground black pepper
2 tbsp Italian parsley, chopped
Casings
Combine ingredients together. Use the sausage making attachment to
make sausages from your required casing. Prick any air pockets with
a pin.
Breakfast Sausage
3.5kg boned pork butts (minced)
4 tbsp kosher salt
2 tsp ground white pepper
2 tbsp of rubbed sage
3⁄4 tsp ginger
2 tsp nutmeg
2 tsp thyme
2 tsp cayenne pepper
1 cups water
Combine ingredients together, mix well. Use the sausage making attachment
with the fine-holed template to make sausages, mince directly into
casing. Prick any air pockets with a pin. Freshly made raw sausages
are best left in the refrigerator overnight so spices can blend and
to allow them to compress.
Chipolata Sausage
1.750kg pork butts
1⁄2 tbsp sage
1⁄2 tsp dried onion flakes
1 tsp thyme
1 tsp mace
90g bread crumbs
1⁄2 tbsp pepper
1 cup water
Cut pork into cubes. Mix the herbs and seasonings in the water then
combine all ingredients. Attach mincing drum to machine and lock
with locking ring. Insert white mincing shaft, attach straight side
of blade to auger making sure it is flush against the shaft. Insert
small template ensuring lugs fit into place, add the sausage making
nozzle and fastening ring. Mount hopper to drum chute. Prepare casing
and attach to sausage making nozzle. Mince directly into casing.
Chicken Sausages
Satay Chicken
1kg chicken thigh fillet sliced
100mls satay sauce or marinade
Marinade chicken in sauce. Attach mincing drum to machine and lock
with locking ring. Insert white mincing auger, attach straight side
of blade to shaft making sure it is flush against the mincing shaft.
Insert small template ensuring lugs fit into place, add sausage making
nozzle and fastening ring. Mount hopper to drum chute. Prepare casing
and attach to sausage making nozzle. Mince directly into casing.
Honey Soy Chicken
1kg chicken thigh fillets sliced
6ml soya sauce
1 tbsp honey or alternately use a honey soy marinade
Marinade chicken in sauce. Attach mincing drum to machine and lock
with locking ring. Insert white mincing auger, attach straight side
of blade to shaft making sure it is flush against the mincing shaft.
Insert small template ensuring lugs fit into place, add sausage making
nozzle and fastening ring. Mount hopper to drum chute. Prepare casing
and attach to sausage making nozzle. Mince directly into casing.
Making your own sausages allows you to control the fat and salt levels
- after all, as Otto von Bismark once remarked, "laws are like
